The grapes are harvested in early September which is the optimum time. After carefully controlled ripening, the best vines are selected. The grapes are harvested in the most favourable of conditions for the subsequent making of the wine.
Fermentation takes place at a controlled temperature of 18ºC for about two weeks. A further three months aging in 300L French oak barrels with lees.
