The grapes are harvested in early September which is the optimum time. After carefully controlled ripening, the best vines are selected. The grapes are harvested in the most favourable of conditions for the subsequent making of the wine.
Fermentation takes place at a controlled temperature of 18ºC for about two weeks. A further three months aging in 300 litre French oak barrels with lees.
Organic, vegan wine with 3 months of aging.

Tasting note
Visual: Pale yellow in colour that will evolve into golden yellow from the third/fourth year.
Olfactory: On the nose we find a variety of ripe white fruits and flowers, which evolves into aromas of dried peach and apricot. Perfectly balanced with connotations of oak from the barrels with a background of fennel and Mediterranean plants.
Taste: Crisp and elegant on the tongue. Fresh and persistent. Silky, long and complex on the palate.
Pairing: Celler Arrufí Llicsó combines with paellas, fatty fish and mushrooms.
